MMM.. Maple

To be quite honest, I chose this recipe just because this was the only recipe I had all the ingredients for. "Baked Explorations : Classic American Desserts Reinvented" is a cookbook that does just what its title says. It takes your old humdrum recipes and tweaks it. Such as Almond Joy Tart, New York Style Crumb Cake (definitely going to try that one), and Whoopie Pies. Not too sure about trying the whoopie pies. My moms recipe is gonna be pretty hard to beat.

I got the cookbook from my Mom last Christmas and Ive probably taken it off the shelf about 13 times since then and have yet to make something from it. So when my husband left me at home to go fishing one night I revisited this little gem of a cookbook.

When I made these cupcakes I halved the recipe, usually a big no no, but I definitely did NOT need 24 cutesy little cupcakes staring at me, screaming "EAT ME" every time I entered my kitchen. Thus forth, I halved it. I don't really think it effected the outcome to much. They were very moist and dense, maybe due to the syrup.

When Matt got home he had one. I don't think he was too impressed. "They were good..." Which means "Don't put that in your recipe box, please." I took them to work and they were gone within 2 hours. he he. I'm not quite sure if that's a compliment or not... The guys here would probably eat anything.
